Italio Potato Express

Using my Saute Express from Land O Lakes which I was able to get using a free coupon from #BzzAgent I created this simple dish.

Instructions:

  1. Use 2 squares out of this box of Italian Herb flavor.
  2. Add to skillet along with a Tbsp of bacon drippings (I use beef bacon) after cutting up new potatoes.
  3. I used 2 bags one of the regular white ones & one with the red, purple and white. Cut up 4 ways then add to skillet.
  4. Cook for about 15 minutes stirring every 5.
  5. Then place in oven for 20-30 minutes on 350 degrees.

Better than Jiffy Cornbread

Ingredients:
  • 1cup milk
  • 1/4cup butter or a stick of unsalted butter(melted)
  • 1 large egg
  • 1cup self-rising flour
  • 1 1/4cup cornmeal (yellow or white)
  • 1/2cup sugar
Directions:
  1. Heat oven to 400 degrees. Spray pan with cooking spray.
  2. Beat with whisk First 3 ingredients. Stir in remaining ingredients. Pour into pan.
  3. Bake 20 -25 minutes or until golden brown.

Roasted Potatoes with Garlic Butter

This recipe was taken from the February/March Taste of Homes Magazine from this year. I love potatoes and have found that mixing sweet potatoes with white potatoes is absolute divine. The first time I did this was about 10 years ago and it was with an Emeril recipe and it was to die for I will definitely post at a later date. This recipe however was created by a young lady by the name of Elizabeth Kelly of Chicago, IL while visiting her grandmother in Tennessee.

Prep: 30 min
Bake: 30 min
Makes: 10 Servings

Ingredients

  • 8 medium Yukon Gold potatoes, peeled
  • 3 medium sweet potatoes, peeled
  • 2 Tbsp. canola oil (olive oil)
  • 1/2 tsp. salt (kosher)
  • 1/4 tsp. pepper
  • 1/4 cup butter (unsalted)
  • 3 garlic cloves, minced ( 2 tsp. From jar)
  • 1 Tbsp. minced fresh thyme or 1 tsp. dried thyme
  • 1/2 cup shredded cheddar cheese (sharp)
  • 1/3 cup grated Parmesan cheese (Romano Pecorino)

Okay so I have placed in parentheses next to each ingredient where I made substitutions. I also altered directions for original see bottom of page for web address.

Directions:

  1. Cut Yukon and sweet potatoes into 1/8 inch slices; toss with oil and sprinkle with salt and pepper.
  2. Place in a 4qt glass baking dish (15×10) and cover with foil.
  3. Bake at 425° for 30 minutes or until tender.
  4. Just before potatoes are ready to come out in a small saucepan, heat butter over medium heat. Add garlic and thyme; cook and stir for 1 minute.
  5. Pour over potatoes. Sprinkle with cheeses.

Now of course I did not make this dish by itself I made it with some filet mignon with sauce over it and some steamed broccoli on the side however I will post the filet mignon menu next. I hope you enjoy this as much as my family did!

DIY Chili Powder

Ever wondered why when you made a homemade version of a seasoning it just didn't do it for you. Might have made you want to run out to the store. First rule you of importance is you must use quality ingredients. Now I very much understand a budget, though if you must skimp somewhere try not to on key ingredients. Now having said all that out of all those I've tried in my opinion Spice Islands is the best. Publix Grocery periodically has a sale and coupons. They also let you stack your coupons but that's another post. This is a recipe I found a while back simply by googling for it, sorry I don't remember where I found it. I believe it was www.allrecipes.com however don't hold me to it.

Chili Powder

  • 1 tsp. paprika
  • 2 tsp. ground cumin
  • 1 tsp. cayenne pepper
  • 1 tsp. oregano
  • 2 tsp. garlic powder

All these ingredients in the above recipes are used in the recipes to follow on this blog :-)

Simple Spaghetti & Salad Dinner

Spaghetti Sauce

  • 1 lb. Beyond Meat or Impossible
  • 1 tbsp. Taco Seasoning
  • 1 jar Tomato Sauce (Ragu or Private Selection)
  • 1 carton sliced mushrooms
  • 1 foil pk. of Land of Lakes Saute Express Italian Herb
  • 1/4 tsp. Salt
  • 2 tbsp. Sugar

Salad

  • Fresh Spinach
  • grape tomatoes
  • shredded carrots
  • cucumbers
  • desired dressing

Directions: (Note cook pasta after sauce is finish and while pasta cooks you can put salad together)

  1. Brown meat in skillet make sure to drain any liquid.
  2. Add tai chi seasoning, tomato sauce, BBQ sauce and sugar and let simmer.
  3. In another skillet add italian herb pack, rinse mushrooms and add. Sprinkle with salt and cook till no more liquid (mushrom will make their own).  
  4. Add to Sauce mixture, then start pasta. I use Angel hair pasta.
